The concept of “farm to table” is actually quite often done by the legendary chef across the world. They use local high quality raw materials within each area as a prominent element in their recipes. Given the potential of Indonesia as a rich country with lots of natural products, the avant grande restaurant that located in Pacific Place, Potato Head and Executive Chef Haruhisha Noguchi recently announced that they will present a selection of food made with local natural ingredients in Indonesia through “Farm to Table” menu. According to them, the majority of its ingredients will come directly from local farmers in Bali and Lampung, while the main supply such as tomatoes, goat’s cheese, fish, to the Wagyu beef will be imported from a supplier in Cianjur and Banten, West Java. Those assortment of fresh materials are then blended by the professional hand of Chef Noguchi into circuits of fantastic dish. Potato Head is a sophisticated twist on the traditional bistro and bar around the globe. Set in a unique and original design complimented by a different interpretation of authentic bistro cuisines and a cocktail list that have set a totally new standard of the drinking culture in Jakarta. The owners of this place, Ronald Akili and Jason Gunawan have approached one of the most prominent architects in Indonesia, Andra Matin to work together in designing a space that is totally different to what the rest have to offer. The design is based on vintage industrial settings. The dining areas and bar are set in between a huge structure covered by murals done by one of the leading Indonesian contemporary artists, Eko Nugroho and on the other side a vertical green wall consisting of live plants were built to compliment the exposed textured cement. To create a nice spacious atmosphere, the spaces are divided into three sections, such as grounds, mezzanine, and outdoor area. In response to create a dramatic architectural texture, the walls and ceilings are covered with a mix of old teak Louvers and exposed textured cement. The louvers were installed in various heights, depths, and dimensions. Which creates dramatic angles thought the space.
